Grandma's Armenian Rice Pilaf


  • 1/2 cup butter
  • 4 oz. angel hair pasta (3 coil is best)
  • 2 cups parboiled rice
  • 4 cups chicken broth
  • 1/2 tsp salt


  • Melt butter in a saucepan.
  • If you are using stick pasta, break into 3 parts. If you using angel hair pasta coils, add 3 coils to the pot.
  • Brown pasta without burning the butter. (Do not walk away.)
  • Brown rice while mixing with pasta.
  • Pour in chicken broth.
  • Do not mix rice again. Add 1 teaspoon salt.
  • Bring to boil. 
  • Just as the rice begins to show on top, cover pot and turn down heat to medium.
  • Cook for 10 minutes. Do not uncover or mix rice.
  • Turn burner off. Let rest for 10 minutes without touching.
  • Mix well to get all the butter on the bottom mixed in.
